Memorial Day Italian Turkey Burgers with Tastefully Simple

Italian Turkey Burgers

 
Ingredients
1 lb. ground turkey
2 Tbsp. prepared Dried Tomato & Garlic Pesto Mix
1/4 cup crumbled feta cheese
4 thin slices mozzarella or provolone cheese
4 tomato slices
4 hamburger buns

Directions
Combine first 3 ingredients; stir to blend. Shape turkey mixture into 4 patties; grill to desired doneness. Top each burger with a slice of cheese during the last minute of grilling. Place burgers on buns; top with a tomato slice. Serve with deli pasta salad. Makes 4 servings.

Garden Veggie Tomatoes Recipe

Okay, okay, I am the first to admit that I don't always get my 5 plus servings of veggies a day but I do try after all I love them, but also love other stuff too.  I'm a foodie, what can I say.  With Spring here and my veggie garden going crazy I have no excuse.  I just ate a fresh roma tomato right off my vine this very morning!  What's better than a cute little tomato stuffed with cheesy goodness?  Not much if you ask me.



Garden Veggie Tomatoes Recipe
Combine first 2 ingredients; chill 2 hours.  Cut tomatoes lengthwise through the stem end  almost through (don't cut all the way).  Make a second cut perpendicular to the first, almost cutting tomatoes into quarters.  Roll the cream cheese mixture into scant 1 inch balls; put one cheese ball into each tomato.  Set filled tomatoes on a serving plate with Blue Aztec Chips on one side.  Sprinkle tomatoes with minced fresh parsley.  Makes 6-8 servings.

Helpful Tips
  • Use cherry tomatoes or roma they are a bit larger than if you tried to use grape tomatoes
  • Hollow out the tomato with a melon baller which I like better than cutting the X pattern
  • Use different color cherry tomatoes like yellow and orange
  • Serve with other assorted veggie tray like sugar snap peas, carrots etc

Giddyup Guacamole Mix Tastefully Simple



Add avocados and water for perfect guacamole every time!  Serve with chips, or dollop on enchiladas and quesadilas.  Also excellent on smoked turkey or veggie wraps.  Each packet makes about 1 1/2 cups guacamole.  Kosher.


For best flavor, enjoy within 2-3 hours of preparation.


Ingredients Needed (2)



  • 3 tablespoons water
  • 2-3 ripe avocados
  • 2-1ounce packets per box (2oz) 56g

Giddyup Veggie Salad Recipe with Tastefully Simple

Spring came super early in the desert of Tucson so I was pretty excited to get my above ground raised garden bed planted with all kinds of veggie goodness from different types of peppers, onions, tomatoes, some carrots and squash from pumpkins to gourds.

Many of the ingredients for this recipe I can use from my own garden, how refreshing.  So, here's to a bountiful harvest and a salad that inspires...this recipe was submitted by Sara Gronholz.


GIDDYUP VEGGIE SALAD

1 package Giddyup Guacamole Mix
3 teaspoons of water
Diced roma tomatoes
Diced avocado
15.5 oz can rinsed and drained black beans
Canned Corn
Diced red pepper
Fresh chopped cilantro
Add water to one packet of Giddyup Guacamole Mix then add veggies, refrigerate until serving

Testing Notes:


  • Add different types of bell peppers, yellow, orange or green are great
  • Add diced chili peppers for a smokier flavor
  • For less "kick" in the salad, add more veggies
  • For more "kick" add a splash of hot sauce or diced jalapenos
  • Add diced chicken for more protein
  • Add some cooked quiona, it takes this salad to a whole other level
  • Add a squeeze of fresh lime juice for an added spark of flavor that is refreshing
  • Serve on or with tortilla chips
  • Serve inside warm tortillas with shredded cheese for a veggie "fajita"
