Giddyup Veggie Salad Recipe with Tastefully Simple

Spring came super early in the desert of Tucson so I was pretty excited to get my above ground raised garden bed planted with all kinds of veggie goodness from different types of peppers, onions, tomatoes, some carrots and squash from pumpkins to gourds.

Many of the ingredients for this recipe I can use from my own garden, how refreshing.  So, here's to a bountiful harvest and a salad that inspires...this recipe was submitted by Sara Gronholz.


GIDDYUP VEGGIE SALAD

1 package Giddyup Guacamole Mix
3 teaspoons of water
Diced roma tomatoes
Diced avocado
15.5 oz can rinsed and drained black beans
Canned Corn
Diced red pepper
Fresh chopped cilantro
Add water to one packet of Giddyup Guacamole Mix then add veggies, refrigerate until serving

Testing Notes:


  • Add different types of bell peppers, yellow, orange or green are great
  • Add diced chili peppers for a smokier flavor
  • For less "kick" in the salad, add more veggies
  • For more "kick" add a splash of hot sauce or diced jalapenos
  • Add diced chicken for more protein
  • Add some cooked quiona, it takes this salad to a whole other level
  • Add a squeeze of fresh lime juice for an added spark of flavor that is refreshing
  • Serve on or with tortilla chips
  • Serve inside warm tortillas with shredded cheese for a veggie "fajita"
